Ribeye Sliders with Horseradish/Blue Cheese Sauce

Ingredients

For Sliders

  • 16 oz. Ribeye
  • 1 1/2 tbsp. Steakhouse Smoked SPG
  • 1 tsp. Olive Oil
  • 3 tbsp. Unsalted Butter (divided)
  • 1 Yellow Onion (julienned)
  • 8 Ciabatta Slider Buns

For Horseradish Blue Cheese Sauce

  • 1/2 c. Prepared Horseradish
  • 1/4 c. Sour Cream
  • 1/4 c. White Lightning
  • 1/4 c. Blue Cheese Crumbles
  • 1/4 Lemon (squeezed)
  • 1/2 tsp. Worcestershire Sauce
  • 1 tsp. Steakhouse Smoked SPG

Instructions

  1. Place Ribeye on plate. Pour Olive Oil on steak and aggressively season entire outside with Steakhouse.
  2. While Steak rests and comes to room temp, place hard bottom pan on burner set to low. Place 1 tbsp. Butter into pan. Once melted, place Onions into pan.
  3. Cook down, stirring occasionally for about 30 minutes or until brown. Pull and set aside.
  4. While Onion are cooking, place all ingredients for Horseradish Blue Cheese Sauce into a bowl. Mix until evenly incorporated. Set in fridge.
  5. Steak should be at room temp now. Turn burner up to medium high and add 2 tbsp. Butter. Once to temp, place Steak into pan. let cook for ~3 minutes per side.
  6. Once Steak is to desired temp (should be medium-rare to medium), pull and let rest for 10 minutes.
  7. While Steak is resting, put together sliders. Spread bottom bun with Sauce. Spread top bun with Caramelized Onions.
    Once 10 minutes is up, slice Steak as thin as possible with knife and add to Sliders.
  8. Top and MUNCH!
  9. Dip your little sliders in more of that sauce!

Notes

  • For warm sliders: Preheat oven to 350F. Place Sliders on baking sheet. Once Slider are put together, place into oven for 8-10 minutes.
  • If you want greens on sandwich, I suggest Arugula.
  • For completely different flavor set, cook Steak same way, add Pickled Onions, Chimichurri, and Feta Cheese to Sliders.
  • Instead of steakhouse, you can use Texas Crutch as well!
  • For more of a BBQ flavored slider, top with Caramelized Onion and The All-American

1. I only eat my steak rare. What's up with the cooking to medium??

For sandwiches, I have found the perfect temp to be medium rare-medium for texture purposes! It's still going to be very juicy.
