Bacon Wrapped Breakfast Meatballs

The How To:

Ingredients

For Meatballs:

  • 2 lb. Breakfast Sausage
  • 1/2 lb. Bacon
  • 1/2 c. Red Onion (minced)
  • 2 Garlic Cloves (minced)
  • 1 Jalapeno (fine mince)
  • 2 Egg (whole)
  • 1/4 c. Milk
  • 1/3 c. Bread Crumbs
  • 1tbsp. Backyard Burger Blend

For sauce:

  • 1 c. White Lightning
  • 2 tsp. Tobasco

Instructions

For Meatballs

  1. Preheat smoker to 225F.
  2. Place ALL INGREDIENTS into bowl. Mix until evenly incorporated.
  3. Roll 2 oz. of mixture into ball. (Should make about 20) and place on baking sheet.
  4. Smoke meatballs for 30 min.
  5. Cut bacon in strips in half. Pull meatballs and rap around ball. Hold bacon with toothpick.
  6. Smoke for an additional 30 min.
  7. Pull and place in oven set to broil to crisp bacon.
  8. Serve hot with side of sauce!

For Sauce:

  1. Put all ingredients into small bowl. Mix until evenly incorporated.

Notes

  • For a different take on the sauce, mix 1 c. Maple Syrup and 2 tsp. Tobasco for a sweet and spice dip.
  • Wash these down with a bloody mary!
